Monday

I'm currently using the foods mentioned in the Portfolio Diet in an effort to get my cholesterol down a bit more before Christmas. I'm also trying to cut out caffeine: I have a negative variation in the MTHFR (cardiovascular health) gene, and consuming caffeine may increase my risk of heart disease (see points 3 and 4 here).

On rising: lemon water

Exercise: run-walk for 20 minutes, followed by 25-minute walk

Breakfast: oats with cherries; oat-bran bread topped with Logicol and St Dalfour four-fruit spread

Snack: fibre drink (berry Metamucil mixed with water and soy milk), apple

Lunch: eggplant, tomato and chickpea stew; oat-bran bread topped with Logicol

Snack: fibre drink, pear, almonds

Dinner: mixed vegetable and tofu stir-fry (adapted from Michelle Bridges' Crunch Time Cookbook) on barley


Snack: fibre drink, apple, almond butter

I have the MTHFKR (that's how it's spelt, yeah?) variation too, and I figure one coffee a day shouldn't kill me. Fingers crossed.

The stew sounds good, Charlotte - have you posted a recipe for that?

LOL, yeah, that's how it should be spelt! I do like coffee but find sometimes just having one gives me the shakes, so I'm sure my body won't miss it! I adapted a recipe for the stew but I'm afraid it's not worth sharing - a bit bland.

That all sounds SO DELICIOUS (except the Logicol…I like fat). Tons of people drink lemon water first thing in the morning. I hear it is supposed to be excellent for you. Do you drink it hot? I adore oatmeal and that four-fruit spread sounds amazing. The stew sounded amazing, too, - it’s too bad it was so bland. Maybe you could spice it up or tweak it in some way? Did you get the pear from your tree? Do you like almond butter better than peanut butter?

Hi Kathleen,

I have the Logicol as it's supposed to be good to help reduce cholesterol levels.

The lemon water is supposed to promote liver detoxification (my liver doesn't detox very well). I just have it with warm water.

The four-fruit spread is nice - it has berries and cherries in it.

The stew actually tastes a bit better now that it has been sitting in the fridge for a few days and the flavour has infused a bit.

No pears off our tree yet - I think they will fruit in autumn.

I like almond butter and peanut butter - almonds are supposed to be good to help reduce cholesterol so sometimes I'll have almond butter instead of almonds.
